French Toast

Ingredients (serves 3–4)

  • 8 slices thick bread (Texas toast, brioche, or challah work best)

  • 3 large eggs (duck or chicken)

  • ¾ cup milk (whole or 2%)

  • 1–2 tbsp sugar

  • 1 tsp vanilla extract

  • 1 tsp cinnamon

  • Pinch of salt

  • Butter for the pan

Optional add-ins

  • A little maple syrup mixed into the batter

  • Dash of nutmeg

  • Splash of heavy cream for richer toast


Instructions

  1. Make the batter:
    In a bowl, whisk together the eggs, milk, sugar, vanilla, cinnamon, and salt until smooth.

  2. Heat the pan:
    Put a skillet or griddle over medium heat and melt a little butter.

  3. Dip the bread:
    Dunk each slice in the batter—just long enough to soak the surface without getting soggy. Let the extra drip off.

  4. Cook:
    Place bread on the hot pan. Cook 2–3 minutes per side until golden brown and slightly crisp on the edges.

  5. Serve:
    Hit it with butter, powdered sugar, syrup—whatever you like. Great with berries, bacon, or sausage.
