Ingredients:

1 cup mayonnaise

2 tbsp dill pickles or relish (finely chopped)

1 tbsp capers (chopped, optional)

1 tbsp lemon juice (fresh squeezed)

1 tsp Dijon mustard (or yellow if preferred)

2 tbsp fresh parsley (chopped)

1 tbsp onion or shallot (finely minced, optional)

Salt & black pepper, to taste
Instructions:

In a small bowl, combine mayo, pickles, capers, lemon juice, mustard, parsley, and onion (if using).

Mix until smooth and well blended.

Season with salt and pepper to taste.

Cover and refrigerate at least 30 minutes before serving — this lets the flavors meld.
This keeps for about a week in the fridge.
