Ingredients (serves 3–4)

8 slices thick bread (Texas toast, brioche, or challah work best)

3 large eggs (duck or chicken)

¾ cup milk (whole or 2%)

1–2 tbsp sugar

1 tsp vanilla extract

1 tsp cinnamon

Pinch of salt

Butter for the pan
Optional add-ins

A little maple syrup mixed into the batter

Dash of nutmeg

Splash of heavy cream for richer toast
Instructions

Make the batter:
In a bowl, whisk together the eggs, milk, sugar, vanilla, cinnamon, and salt until smooth. -
Heat the pan:
Put a skillet or griddle over medium heat and melt a little butter. -
Dip the bread:
Dunk each slice in the batter—just long enough to soak the surface without getting soggy. Let the extra drip off. -
Cook:
Place bread on the hot pan. Cook 2–3 minutes per side until golden brown and slightly crisp on the edges. -
Serve:
Hit it with butter, powdered sugar, syrup—whatever you like. Great with berries, bacon, or sausage.
