Cast Iron Brown Butter Banana Bread

A warm, homemade banana bread baked right in a cast iron skillet. Brown butter adds a rich, nutty flavor while the cinnamon sugar topping gives it a sweet finish with just the right amount of spice.

Ingredients

Wet Ingredients

  • 2 ripe bananas, mashed
  • ½ cup (1 stick) unsalted butter
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract

Dry Ingredients

  • 1¾ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg, optional

Cinnamon Sugar Topping

  • 2 tbsp brown sugar
  • 1 tsp ground cinnamon
  • 1 tbsp butter, melted

Directions

1. Preheat the Oven

Preheat your oven to 350°F.

2. Brown the Butter

In a cast iron skillet over medium heat, melt the butter and continue cooking until it turns golden brown and develops a rich, nutty aroma.

Remove from the heat and allow the browned butter to cool for 5–10 minutes.

3. Prep the Skillet

Lightly grease the cast iron skillet with butter or cooking spray and set aside.

4. Mix the Wet Ingredients

Mash the bananas in a small bowl.

In a large mixing bowl, whisk together the browned butter, brown sugar, and granulated sugar until well combined.

Add the eggs, vanilla extract, and mashed bananas. Mix until smooth.

5. Mix the Dry Ingredients

In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.

6. Make the Batter

Add the dry ingredients to the wet ingredients and gently mix until just combined. Be careful not to overmix.

Pour the batter into the prepared cast iron skillet and spread it evenly.

7. Add the Cinnamon Sugar Topping

Brush the top of the batter with melted butter.

Combine the brown sugar and cinnamon, then sprinkle the mixture evenly over the top.

8. Bake

Bake at 350°F for 45–55 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.

9. Cool & Serve

Allow the banana bread to cool for 10–15 minutes before slicing.

Serve warm with butter and enjoy!

Don’t rush the browned butter. Let it cook until it reaches a deep golden color and gives off a nutty aroma without letting it burn. That extra step adds a deeper, richer flavor that sets this banana bread apart.
