Venison Summer Sausage Caprese Salad

A wild game twist on a classic Caprese salad. Savory venison summer sausage, fresh mozzarella, ripe tomatoes, basil, and balsamic glaze come together for a simple dish that works great as an appetizer, side, or light meal.

Ingredients

  • 12 oz venison summer sausage, sliced into bite-sized pieces
  • 8 oz fresh mozzarella, sliced
  • 2 tomatoes, sliced
  • ¼ cup fresh basil, chopped or torn
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic glaze
  • ¼ tsp black pepper
  • Pinch of salt, optional

Optional Additions

  • Fresh cracked black pepper
  • Extra balsamic glaze for serving

Directions

1. Prep the Ingredients

Slice the venison summer sausage into rounds or bite-sized pieces. Slice the fresh mozzarella and tomatoes, then chop or tear the fresh basil.

2. Build the Salad

Arrange or layer the ingredients on a serving platter:

  • Venison summer sausage
  • Fresh mozzarella
  • Tomatoes
  • Fresh basil

3. Dress It Up

Drizzle the salad with extra virgin olive oil and balsamic glaze. Season with black pepper and a pinch of salt, if desired.

4. Serve

Serve immediately, or chill for 15–20 minutes before serving to let the flavors come together.

Field to Flame Tip

For even more flavor, lightly sear the venison summer sausage in a skillet for 2–3 minutes before adding it to the salad. The warm, savory sausage paired with the cool mozzarella, fresh tomatoes, and balsamic glaze takes this simple dish to another level.
