Field Sauce
Ingredients

1 cup mayonnaise

2 tbsp ketchup

1 tbsp Worcestershire sauce

1 tbsp lemon juice

2 tsp hot sauce
Directions
Mix all ingredients together in a bowl until smooth. Cover and chill in the refrigerator until ready to serve.
Cajun Wild Turkey Nuggets
Ingredients

1 side of a wild turkey breast, cut into bite-sized pieces

2 cups seasoned flour

1 tbsp Cajun seasoning (or to taste)

Oil for deep frying
Instructions

Heat 2–3 inches of oil in a heavy pot over medium-high heat until it reaches 325–350°F.

While the oil heats, season the turkey bites with Cajun seasoning.

Toss the turkey pieces in seasoned flour until fully coated.

Fry the turkey in small batches for 5–8 minutes, or until golden brown and cooked through (time will vary depending on piece size and oil temperature).

Transfer finished nuggets to a warm platter and loosely cover with foil while the remaining batches cook.

Serve hot with the Field Sauce for dipping.
