Ingredients
- 1 lb ground venison
- Burger buns
- Cheese slices
- 1 onion, sliced
- 1 tbsp butter
- Burger sauce (recipe below)
Instructions
1. Form the Patties
Divide the ground venison into 3.5 oz balls and lightly form them into patties. Keep them loose so they smash well later.
2. Smoke the Burgers
Set your smoker to 200°F using your favorite wood. Place the patties on and smoke for about 30 minutes.
3. Rest
Remove from the smoker and let rest for 5–10 minutes while you heat your flat top or skillet.
4. Smash & Sear
Place patties onto a very hot flat top or pan. Smash them down firmly to create thin burgers. Cook 1–2 minutes per side until crispy edges form. Add cheese and let it melt.
Caramelized Onions
Ingredients
- 1 onion, sliced
- 1 tbsp butter
Instructions
Melt butter in a pan over medium heat. Add onions and cook low and slow, stirring occasionally, until soft, golden, and caramelized (15–20 minutes).
Venison Burger Sauce
Ingredients
- ½ cup mayonnaise
- 2 tbsp ketchup
- 1 tbsp Dijon mustard
- 1 tbsp sweet relish
- 1 tsp brown sugar
- 1 tsp apple cider vinegar
Instructions
Mix everything together until smooth. Refrigerate until ready to use.
Build the Burger
Toast your buns if desired.
Stack two venison smash burgers with melted cheese, top with caramelized onions, and finish with a generous spoonful of burger sauce.
