Ingredients
Wild Turkey Filling
- 1 wild turkey breast
- 2 cups chicken stock
- 1 packet ranch seasoning
- 1 block (8 oz) cream cheese
- ½ cup buffalo sauce
- 1 cup shredded cheddar cheese
- 2 green onions, chopped
- Salt and pepper, to taste
Egg Rolls
- Egg roll wrappers
- Small bowl of water (for sealing)
- Oil for frying
Instructions
Step 1: Cook the Wild Turkey
Place the wild turkey breast into a slow cooker.
Pour in the chicken stock and add the ranch seasoning packet.
Cook on low for 6–8 hours, or until the turkey is tender and easily shreds with a fork.
Remove the turkey and shred it thoroughly.
Step 2: Make the Buffalo Filling
Return the shredded turkey to a large bowl or the slow cooker.
Add the cream cheese, buffalo sauce, cheddar cheese, and chopped green onions.
Mix until the filling is creamy and fully combined.
Season with salt and pepper if needed.
Step 3: Roll the Egg Rolls
Lay an egg roll wrapper on a flat surface with one corner pointing toward you, creating a diamond shape.
Place a scoop of filling in the center of the wrapper.
Fold the bottom corner over the filling, then fold both sides inward.
Roll tightly toward the top corner.
Brush the final edge with water and press firmly to seal.
Repeat with the remaining filling.
Step 4: Fry Until Golden
Heat oil to 350°F in a deep fryer or heavy pot.
Carefully place the egg rolls into the hot oil and fry for 3–5 minutes, turning as needed, until they are golden brown and crispy.
Remove and place on paper towels or a wire rack to drain.
